Aspall Cuvee Chevallier Suffolk Cyder (cider) is double fermented. It is a sparkling cider produced from apples higher in acid and lower in sugar content, so it has many of the tart characteristics of classic Champagne.

Aspall Crisp English Draft Cider… $9
Draught has a mid straw colour with a floral and appley aroma, especially of Russetts. It is a medium dry cyder with a mouth filling mousse and a delicate flavour of fresh pressed apples which has a complexity that enhances its long finish.
Aspall Perronelle’s Blush English Cider with Blackberry Liqueur… $9
Perronelle's Blush has a subtle blackberry aroma with a hint of traditional cyder apple. Deceptively smooth with a silky but refreshing palate, it offers a perfect bend of sweetness and acidity with a lovely mouth feel and a lingering aftertaste of berries.
Reverand Nats Deliverance Ginger Tonic … $9
Each batch is full of gallons of pure squeezed ginger juice, lemongrass stalks, the fresh squeezed juice and zest of many limes and topped off with a bark from a tree in Peru which produces a wild form of the drug quinine.  This truly is the tastiest “tonic” you will ever drink.  Malaria and scurvy be dammed!

Dupont Bouche Brut de Normandie   375ml Bottle… $9
Cidre Bouché is created using the traditional method of the Pays d'Auge. Full of fruit, freshness and a little funk, the taste reveals the aromas of apples and citrus with finesse ("cidre bouché" is a term for traditional cider, literally "cider under cork"). 5% ABV
 
Specialty Bottled Sours

Quetsche Tilquin (Very Limited Release!) … $17
The Quetsche Tilquin is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity and round.  It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.  12.7ml bottles 6.4% ABV
Rodenbach Vintage Grand Cru 2010… $20
Balsamic vinegar on the nose, with beautiful sherried notes. Sweet and sour loveliness. Tongue tingling, mouth puckering acidity, lots of sourness that fades gradually. Aged an extra 2 years in oak barrels, well balanced and delicious.  750ml bottle 7% ABV
Hof Ten Dormaal – Zure van Tildonk Sour Blonde… $11 (Limited Release!)
This traditional sour beer uses the wild yeasts found around the Hof Ten Dormaal farm.  This gives the beer a soft, refreshing sour taste.  After a year of aging on a barrel this beer is ready to drink!  Each batch is carefully aged in the cellars at the Engelburcht Monastery for several months prior to release.  12.7oz bottle
Rodenbach Grand Cru… $13
A blend of 1/3 young beer and 2/3 of beer aged 2 years in large oak vats. The more important proportion of oak matured beer contributes to its fruity taste, complexity and intensity. The finish is worthy of a great wine.

Sierra Nevada/Russian River -  Brux… $13
Brux Domesticated Wild Ale has been refermented in the bottle with Brettanomyces bruxellensis and will change and develop over time. Copper-colored, dry and complex, with slightly tart notes of green grass, pear, spice and lemon - this ale will progress in the bottle for many years. 750ml bottle
Almanac Brandy Barrel Peche… $11
Historically, fruit-infused sour beers were a way of preserving the summer harvest. In that tradition, this blonde ale was added to brandy barrels with handpicked, high-summer peaches.  12.7oz bottle.
Lindeman’s Cuvee Renee Gueuze… $9
6 months of maturation and this Gueuze obtains a golden color and a cidery, winey palate: reminiscent of dry vermouth with a more complex and natural flavor.  12oz bottle.
Omer Vander Ghinste Cuveè des Jacobins Rouge… $8
Cuvée des Jacobins Rouge is a Flemish Sour Ale, with a beguiling balance of malty sweetness and acidic sharpness. It is made from spontaneously fermented and barrel-aged beer of at least 18 months in age.

Duchesee de Bourgogne is the traditional top fermented reddish-brown ale from the West-Flanders region of Belgium. This refined ale also known as "The Burgundies of Belgium" is a blend of 8 and 18 months old ales following careful maturation in oak casks. 100% natural and unpasteurized. 12oz bottle

Brewed for Monk’s Café in Philidelphia, Belgian Brouwerij Van Steenberge N.V. has created a blending of young and old beers to make this mildly tart sour ale. 12oz bottle
